Cancer research Center of Heidelberg ( Germany) Have concluded that consumption of processed pork increases the risk of cerebralglioma ( a type of cancer of the central nervous system).
The risk is highest for those who regularly eat:
. Cooked ham,
. Processed pork, particularly when it is very well done,
. Frid bacon.
The nitrosamine content of these foods is considered responsible for their carcinogenic effect.
